Family Friendly Chicken Fried Rice


  • 1 tsp olive oil
  • 500g Chicken Mince or Diced Chicken
  • 3 carrots, chopped
  • 1 cup frozen green beans, peas or corn
  • 1 egg
  • Spring Onion (optional)
  • 20ml reduced salt soy sauce
  • 1 ½ cups rice (uncooked)


  1. Cook rice according to packet instructions
  2. Heat oil in a large non-stick frypan and fry onions,
  3. Add Chicken and cook until browned
  4. Add vegetables and stir until warmed through
  5. Add cooked rice and crack the egg into the rice and stir through
  6. Stir through Soy sauce and add spring Onion if required
