Challenge Approved Chicken Curry


  • 680g Chicken Breast or Tenderloins
  • 2tsp Coconut Oil
  • ½tsp Roasted Cumin
  • 1½tsp Garam Masala
  • 2tsp Curry Powder
  • ½ Brown Onion (finely chopped)
  • 5 Garlic Cloves (minced)
  • 1 Large Tomato
  • 2tb Fresh Coriander
  • 100ml Light Coconut Milk
  • 2/3 -3/4 cup Water
  • 100g Carisma Potato
  • 150g Green Beans
  • 1 Red Capsicum
  • Basmati Rice as per plan


  1. Heat oil in a large deep skillet over medium heat
  2. Add Onion and Garlic and sauté for 1 minute
  3. Add Cumin, Masala and Curry Powder and mix thoroughly
  4. Add Chicken to the pan and cook for 1 minute each side
  5. Add Tomato, Coriander, Coconut Milk and Water
  6. Stir ALL ingredients and cover pan
  7. Simmer on medium-low heat until Chicken is cooked through (~30min)
  8. Dice and add Potato, Beans & Capsicum then cover and cook for a further 10 minutes

Serve with Basmati Rice as per plan
