Vegan, gluten free protein bars

Ingredients

  • 1 cup raw almonds, roughly chopped
  • 1/2 cup pepitas
  • 1/2 cup sunflower seeds
  • 1/2 cup dried blueberries
  • 1/4 teaspoon celtic sea salt
  • 2 teaspoon cinnamon
  • 4 cups buckwheat, or amaranth or puffed rice or combination
  • 6 scoops Maxine's PURE protein (all flavours work really well)
  • 1/3 cup coconut oil
  • Water, to bind

Directions

  1. Mix together all ingredient, adding just enough water to combine and form firm shape.
  2. Press into paper lined tray and refrigerate for an hour or until firm.
  3. Slice into 8 bars
